Snickerdoodles! Recipe #2!

Snickerdoodles
Recipe #2

Can you believe Halloween is just hours away?! I'm so thrilled! I decided to show you one of my favorite recipes for the fall time: snickerdoodles! I have made these yummy cookies countless of times! The original recipe is from http://www.realsimple.com/ (type in 'snickerdoodles' in the search bar on the site.) Let's get baking!

Ingredients:
Makes 30 cookies, double for 60.

1 1/2 cups of flour
1/2 tsp. baking soda
1 tsp. cream of tartar
1/4 tsp. kosher salt
1/2 cup (1 stick) unsalted butter, at room temperature
1/4 cup light brown sugar
1/2 & 1/8 of sugar (separate cups)
1 large egg
1 tsp.  vanilla extract
1 tsp. ground cinnamon

Directions:

  1. Heat oven to 375° F. In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt.
  1. With an electric mixer, beat the butter, brown sugar, and 1/2 cup of the granulated sugar on medium-high speed until light and fluffy, 2 to 3 minutes. Beat in the egg and vanilla. Reduce speed to low and gradually add the flour mixture, mixing just until incorporated.
  1. In a shallow bowl, combine the cinnamon and the remaining 1/8 cup of granulated sugar. Form the dough into balls (each equal to 1 level tablespoon). Roll the balls in the cinnamon sugar mixture and place on parchment-lined baking sheets, spacing them 2 inches apart.
  1. Bake until the edges are golden, 12 to 14 minutes. Cool slightly on the baking sheets, then transfer to wire racks to cool completely.
